Viper Pork Barbecue Alternate Version

6 to 8 pound boston butt
Apply about 5 ounces of Viper Rub
Place in a foil pan and cover with foil
Wrap and leave in refrigerator for 12 to 24 hours
Remove from refrigerator and remove foil covering
Allow to reach room temperature
Start your grill and allow to reach 300 to 350 degrees.
Add a few soaked chunks of pecan or mesquite wood to your charcoal for smoke flavor
Place your coals on one side of grill and pan on other side so that you are cooking with indirect heat.
Cook on your grill at 350 for 3 hours in the foil pan
Remove and cover with foil tightly and place in oven at 200 for 8 hours.
Remove from oven carefully because there will be lots of fluid in the pan.
Drain fluid and remove fat saving juice to add back into meat. This keeps the meat moist and has lots of flavor.
Allow to cool and it should be very tender and easy to pull.
Add one pint of ViperSauce and mix
